INGREDIENTS -2-3 cups cooked brown rice (chilled) -1 tablespoon Ziggy Marley Coco'mon coconut oil -1 small onion -1 clove garlic -1 tsp fresh grated ginger -1/2 scotch bonnet pepper, finely diced -1-2 teaspoons soy sauce -1/2 cup diced bell pepper -1/3 cup diced carrot -1 cup chopped callaloo (trimmed) -3-4 okra -1/2 teaspoon sesame oil
DIRECTIONS -Heat the coconut oil on medium in a wok or non-stick pan and add the garlic, onion, ginger, diced peppers, carrot and black pepper. Cook for 2-3 mins.
-Then add the Callaloo and diced scotch bonnet pepper, sautee a few minutes. Now add the chopped okra, soy sauce and sesame oil and cook for another 2-3 minutes. once the callaloo is wilted, add the rice. Mix well and heat though.
