
Baked BBQ Tofu
INGREDIENTS
-1-14 oz. package extra-firm tofu
-1/2 cup Jammin' Jerk Barbecue Sauce
-Ziggy Marley Coco’Mon Coconut oil or cooking spray
DIRECTIONS
-Wrap the tofu block in a clean kitchen towel, place a heavy pot or a few cookbooks on top to press the tofu. Leave for 30 minutes. Cut into 1/2-inch thick slices, then quarter each slice.
-Pour barbecue sauce into an 8-inch square baking dish. Place tofu in the dish and gently toss to coat. Let tofu marinate in sauce for at least 1 hour, turning occasionally.
-Preheat oven to 400 degrees. Spray a rimmed baking sheet with oil or cooking spray. Place tofu on baking sheet (do not discard barbecue sauce!) and bake for 20 minutes. After 20 minutes, turn tofu over and brush with additional barbecue sauce. Bake 20 minutes more or until tofu is browned on edges. Toss tofu in remaining barbecue sauce and serve.
Baked Yucca Fries
INGREDIENTS
-2 large yuccas
-1 T Ziggy Marley Coco’Mon coconut oil
-1/2 tsp chipotle chili powder
-1 tsp sea salt
-freshly ground black pepper, to taste
-One Love Spicy Ketchup for serving
DIRECTIONS
-Preheat oven to 450 degrees F.
-Peel yucas with a vegetable peeler to remove skin.
-Chop in half and then slice each half into fry-shapes. Be sure to discard the tough center fiber
-Place sliced yucca into a large pot and fill with water.
-Heat on stovetop until water comes to a boil. Let cook in boiling water for 10 minutes.
-Strain yucca from water and rinse with cold water.
-Place yucca in a large bowl and top with coconut oil.
-Sprinkle with chipotle chili powder, salt and pepper and lightly toss to coat.
-Line onto a baking sheet and bake for 15 minutes.
-Remove from oven and flip.
