
INGREDIENTS -1 (12-inch) cucumber -8 ounces cream cheese, softened -1 Tbs chopped fresh dill -2 Tbs capers, drained -1/4 teaspoon salt -Fresh ground pepper to taste -3 ounces smoked salmon
DIRECTIONS -Combine softened cream cheese, chopped dill, salt, pepper, capers and smoked salmon into a smooth spread. -Using a vegetable peeler, peel the cucumber into thin strips, lengthwise. Or slice thinly, lengthwise, on a mandolin. -Spread the smoked salmon mix onto each cucumber strip and roll up. chill and serve
