Creamy Garlic Jerk Pasta


Here is a quick and delicious dish with a kick! My boys keep on asking for this one. They love it plain but you could try serving this with a nice piece of fish, grilled veggies or tofu.

1 box spaghetti (I like to use half plain and half whole wheat pasta)

garlic salt with parsley to season water

2 Tbs. olive oil

1 large onion, chopped

3 scallion, chopped

3 cloves garlic, minced

1-2 Tbs jerk paste (I used Walkerswood)

1 jar Organic Roasted Garlic Alfredo Sauce

Bring a large pot of water, heavily seasoned with garlic salt, to a boil. Cook the spaghetti in the seasoned water until al dente. Drain the pasta, reserving a cup of the water for later.

In a large pan, heat the olive oil over medium high heat. Saute the onion, scallion and garlic, along with the jerk paste, until soft. Stir in the Alfredo sauce until everything is combine. Next, toss the cooked pasta with the Alfredo sauce until coated. Add some of the reserved pasta water if more liquid is needed.
