Shake it up Scotch Bonnet Lime Vinaigrette

You can use this scotch bonnet lime vinaigrette over a green salad, but don’t stop there. This vinaigrette works well as a marinade, or drizzle for fresh fish, tofu or veggies... anything you want to add a delicious tangy and sweet zing too! Feel free to adjust the amount of pepper based on your spicy food tolerance, but I love mine with a real strong kick.

Ingredients

  • ¼ cup extra-virgin olive oil

  • 1/2 cup fresh lime juice

  • 1 tsp lime zest

  • 3 cloves of garlic, minced

  • 1 Tbs finely grated fresh ginger (or ginger paste)

  • 1 scotch bonnet pepper, seeded and finely minced

  • 1/4 cup honey

  • 1 teaspoon kosher salt

  • ¼ teaspoon freshly ground pepper

Instructions

  1. Mix all ingredients in a jar with a tight fitting lid and shake it up, refrigerate.

  2. For the best flavor, allow the vinaigrette's ingredients to meld overnight (6 to 8 hours) prior to serving.
