Try my savory twist on these beautiful muffins, from my kitchen to your!
1 1⁄4 cups flour1⁄2 cup cornmeal1⁄4 cup sugar2 teaspoons baking powder1⁄2 teaspoon salt1 egg1⁄4 cup oil3⁄4 cup milk1⁄4 cup fresh basil, minced1⁄4 cup tomatoes, diced1 tablespoon fresh parsley, minced1⁄4 cup mozzarella cheese, shredded 2 garlic cloves, minced
1 tomato, thinly sliced (enough to top each muffin)
Preheat oven to 400 degrees Fahrenheit.
Mix everything together, fill each greased muffin cup with about 1/4 of batter.
Top each muffin with a slice of tomato.
Bake for 18 minutes.
