Savory Tomato Basil Muffins

Try my savory twist on these beautiful muffins, from my kitchen to your!



1 1⁄4 cups flour
1⁄2 cup cornmeal
1⁄4 cup sugar
2 teaspoons baking powder
1⁄2 teaspoon salt
1 egg
1⁄4 cup oil
3⁄4 cup milk
1⁄4 cup fresh basil, minced
1⁄4 cup tomatoes, diced
1 tablespoon fresh parsley, minced
1⁄4 cup mozzarella cheese, shredded 
2 garlic cloves, minced 

1 tomato, thinly sliced (enough to top each muffin)




Preheat oven to 400 degrees Fahrenheit.

Mix everything together, fill each greased muffin cup with about 1/4 of batter.

Top each muffin with a slice of tomato.

Bake for 18 minutes.
