2 slices bread of choice, toasted 1 avocado 2 Tbs lemon juice 2- 3 Tbs basil pesto (homemade or store-bought) 4 slices tomato
cracked black pepper to taste
olive oil for drizzling
Mash avocado, lemon juice and pesto together with a fork. Spread the mixture on top of the toast. Top with tomato slices, a drizzle of olive oil and cracked pepper corns.
