These sweet potato wedges have just enough sweetness, balanced out with a little sea salt and a dip in my Spicy Scotch Bonnet Pepper Sauce. Your mouth is about to "Catch a Fire"!
4 large sweet potatoes 2 tablespoons coconut oil 1/2 tablespoon sea salt 1 tablespoon curry 1 teaspoon garlic powder 1/2 teaspoon black pepper
1. Preheat oven to 450. Cut the sweet potatoes into wedges
2. In a large bowl, toss the sweet potatoes with the coconut oil until coated.
3. Sprinkle on the remaining ingredients and toss again. 3. Arrange wedges in a single layer on a large nonstick baking sheet. Bake, turning once, until browned and crisp, about 35-40 minutes.
Serve hot with Catch a Fire pepper sauce on the side for dipping. Enjoy!
