Grilled Peaches with Basil and Feta

Fire up the grill and put on some peaches! Fragrant basil and salty feta atop a sweet juicy peach makes an amazing taste combination! Try serving these as a side or on top of a nice bed of summer greens for the best salad ever. From our kitchen to yours...Enjoy!

 

 

2-4 peaches, sliced in half, pit removed
2 tbsp. Balsamic Vinegar 
1 tbsp. Olive Oil 
1/4 - 1/2 cup crumbled feta cheese
5-8 fresh basil leaves, torn or roughly chopped

 

Directions:

Preheat grill to medium high heat. Coat the halved peaches in balsamic and olive oil. Using grill tongs, place each peach half on the grill, skin-side up. After a few minutes, check for grill marks. Rotate each peach to get a criss-cross grill pattern. Watch carefully so they do not get too dark or burn. Remove from the grill, place on a plate skin-side down, and sprinkle peaches with feta and basil. Drizzle with a little more olive oil and balsamic if desired, serve immediately.
