Overnight Oats are an easy make-ahead breakfast. It requires no cooking and you could make a full week's worth over the weekend.
This recipe is filled with delicious carrot cake spices and the carrots, nuts, and raisins give it a nice texture and nutritional boost.

Ingredients: ½ cup rolled oats ½ cup grated carrot 2 tbsp raisins pinch of salt ½ tsp cinnamon pinch of nutmeg pinch of ground ginger 1 tbsp maple syrup 1 cup almond milk
toppings options: raisins chopped walnuts flaked coconut
Instructions: Have a mason jar or other lidded glass jar ready. Peel and finely grate 1 medium carrot. Set aside. Place oats, grated carrot, raisins, sea salt, cinnamon, ground ginger, nutmeg, maple syrup and almond milk into the jar and stir thoroughly until combined. Close the lid and place in the fridge overnight to allow the oats to soften and the flavors to develop. Before serving sprinkle with toppings.
